Oftentimes, I cannot decide what I want! This combination of mouthwatering fruit, herbs, onions, and Greek yogurt is the perfect mix of both savory and sweet.

Ingredients To Make The Salsa

3 (About 1 Cup) | Kiwis, Finely Diced |
1/2 (About 1/2 Cup) | Red Onion, Finely Diced |

Juice Of 1 | Lemon |
1/2 Teaspoon | Salt |
1/4 Teaspoon | Freshly Ground Black Pepper |
Ingredients To Make The Crepes

How To Make The Salsa
Combine the strawberries, kiwi, onion, basil, lemon juice, salt, and black pepper in a medium bow. Refrigerate for at least 30 minutes to allow the flavors to combine.
How To Make The Crepes
In a medium bowl, whisk together the milk, egg whites, oil, and water. Gradually whisk in the flour until the mixture is well combined.
Coat a large skillet with the cooking spray, and place it over medium heat. When the skillet is hot, ladle in 1/3 cup of batter and cook, undisturbed, until the edges begin to slightly brown. 1-2 minutes. Using a spatula, flip the crepe over and cook for 30 seconds more. Transfer the crepe to a large plate and place a piece of parchment paper over the crepes. Repeat with all the remaining batter, placing parchment paper between each crepe to prevent them from sticking together. You will have 8 crepes.
Place 1 crepe on a large plate and spoon 1/2 cup of Greek yogurt onto it and top with 1/3 cup of the fruit salsa. Fold in both sides and fold the crepe in half to seal. Turn on the crepe over so the seam is on the bottom of the plate. Repeat with the reaming of the crepes, salsa, and yogurt.
Refrigerate: Store the fruit salsa in a resealable container for up to 1 week. Place the crepes, with parchment paper between each layer to prevent sticking, in a large container, and store at room temperature for up to 1 week.
